Nothing says “Happy Labor Day” quite like grilling outside. End your summer on a high note with a warm and tasty, mouth-watering veggie kabob. Yep, trust me… if I can grill, you can grill!
Ingredients:
- yellow squash
- green zucchini
- green pepper
- red pepper
- purple onion
- mushrooms
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/2 tsp cayenne pepper
Preheat an outdoor grill to medium heat.
Chop vegetables into thick slices and thread onto skewers, alternating the colors. Sprinkle the skewers with the pepper, garlic powder, chili powder and cayenne pepper. Cook skewers on grill until vegetables are lightly charred on all sides (this usually takes about 12 minutes).
Pair it with savory potato salad, and you’ve got yourself a meat-free, dairy-free BBQ lunch!
