It’s Friday! And you know what that means… football weekend is just around the corner. Looking for a game day appetizer? You can’t go wrong with this vegan take on spicy buffalo wings!
So whether you are watching the Fightin’ Texas Aggies defeat the Razorbacks or the Cowboys wipe out the Chargers, enjoy the game with these guilt-free, flavorful “wings.”
Ingredients:
- 1 head cauliflower
For the Batter:
- 1/2 cup white rice flour
- 1/3 cup water
- dash of Cholula Hot Sauce*, or whichever kind you like
- pinch of salt
For the Spicy Buffalo Sauce:
- 1/4 cup Cholula Hot Sauce
- 1/4 cup canola oil
Begin by preheating the oven to 450 degrees. Rinse the cauliflower and break it apart, keeping the pieces about “chicken wing” size.
Next, mix the batter ingredients together in a small bowl – it should be slightly runny, but thick enough to stick to the cauliflower. Dip the cauliflower in the batter until completely coated, then place on a greased baking sheet. Bake for 20 minutes or until the batter hardens.
While the cauliflower is in the oven, you can start on the sauce. Mix all the sauce ingredients together in a large bowl, whisking with a fork to get good consistency. Once the cauliflower is finished baking, place the cauliflower (still hot) in the bowl and stir until it is evenly covered with the sauce. Place back on the baking sheet, and bake for about 5 more minutes, or until cauliflower is crispy.
