While some may think that picnic season is over… here in Texas the weather is now perfect for a cozy, fall picnic. So let’s pack up those baskets, fold up our quilts and head out with friends, family, or just snuggle up with that special someone, while enjoying a meal in the great outdoors!
Whether going to the park, beach or on a hike, here are a few of my veggie girl picnic must-haves…
One Meatless Meat item… something hearty and filling. Not Tuna Pate is great for the summertime, but I suggest a warm Sloppy Chick for a fall picnic.
I took a couple of these tasty, veggie sloppy joes on a picnic to the Alamo with my special someone, Casey, just a few weeks ago… and trust me, you know the sandwich is good when your boyfriend can’t even tell it’s meatless. Just a side note – Casey is a meat-eating, Texas singer/songwriter and producer. He has an amazing talent and is one of my favorite musicians (although my opinion might be biased). Next, choose a Side Dish. You can’t go wrong with good ol’ Southern Potato Salad at a picnic, but if your taste buds are feeling adventurous, give Couscous & Cranberry Salad a try. The savory couscous combined with the tangy cranberries will leave your mouth full of flavor. In a hurry to pack and don’t have time to prep? No problem… that’s the beauty of plant-based eating – chop up some veggies (carrots, celery, broccoli, etc.) and you are good to go!
Finally, my favorite… Dessert. Since we don’t want to add any unnatural sugar into our meal, I suggest keeping the dessert raw. Try this all-raw Chocolate Mouse Pie recipe or bring along a bowl of fresh strawberries (all the sweetness and no added sugar). Don’t have a sweet tooth? I don’t know how that would be possible, but I have heard that there are some of you out there… no worries, got you covered. Instead, try a Cucumber Cupcake to round out your meal… and your picnic is complete.
So, veggie lovers, grab your napkins, plates, forks, and don’t forget your cozy quilt… it’s time to head outside for a brisk, fun, fall picnic in the great outdoors!
