During the fall season, my mind always begins thinking of family and childhood memories, like eating dinner with my dad, mom and sister around the kitchen table. Maybe it is something about the cool weather that reminds me the holidays are just around the corner, and it won’t be long before we’ll all be surrounded by the warmth of our family and loved ones. With all my thoughts on family recently, I began thinking of family-style dishes, and nothing says “family meal” quite like a big, creamy, deep dish of lasagna. Mmm, my mouth starts watering just thinking about it.
Regular lasagna can have anywhere from 500 to 600 calories per slice. And who just has one slice of lasagna? Yikes! But wait right there… this raw lasagna recipe has about 480 calories in the entire dish! Wow folks, talk about going back for seconds!
ingredients
- 3 zucchinis
- 1 cup arugula
- ½ cup parsley
- ½ bunch cilantro
- 1 green onion, diced
- 1 cup spinach
- 1 cup cherry tomatoes
- 1 tsp. oregano
- 1 tsp. basil
- 1 tsp. thyme
- 1 tsp. dill
- 1/2 zucchini
- ¼ cup raw pine nuts
- 2 garlic cloves
instructions
- Using a mandoline (or potato peeler like me), peel the zucchini into long, thick strands (similar to lasagna pasta strips) and set aside.
- Place all "zesty green filling" ingredients into the food processor and blend until creamy. Set Aside.
- Place all "marinara" ingredients into the food processor and blend until smooth. Set aside.
- Place the "pine nut cream" ingredients into the food processor and puree until creamy, then set aside.
- Layer the ingredients into a deep dish of your choice. Begin with a thick layer of zucchini peels to support the lasagna, then add the green filling, next comes the marinara, then another zucchini layer, green filling and pine nut cream. Continue layering ingredients until you run out. Serve & enjoy!

I like to top off the lasagna with a few halved cherry tomatoes to make the lasagna a little extra juicy!

Love the recipe but ran out of both green & red layers? Only used less than 2 zucchini’s…would quadruple the filling next time. What size of deep dish did you use? As in the pix it looks like you have lots of filling? But even if its a loaf pan..no way would 3 zucchinis fit ?

I did use a loaf pan with 3 small zucchinis. Also, with the filling and marinara, I should have specified – the measurements are “packed” …as in 1/2 cup parsley packed into the measuring cup.
